As lasers paint the Opera House, settle in for our VIVID Set Menu – $109 pp. Choose from saffron crab linguine, spicy tuna tartare, or wild‑mushroom pâté, then move to mains like pistachio‑pesto snapper or truffle‑laced O’Connor tenderloin. Finish with poached pear steeped in mulled wine or zesty lemon pavlova. Available every dinner service during the festival.
Sip the Spectrum at Hacienda
Our glass‑walled lounge is serving kaleidoscopic cocktails such as Strawberry Fields Forever, Yellow Mellow, and the bubble‑topped Dreams —all $25. Chase the sunset at Dream Hour (Mon–Fri, 4‑6 pm), then stay to watch the foreshore ignite; a $60‑pp minimum applies after 6 pm.
