Pullman’s Hacienda Escape

Hacienda Sydney is the ultimate word of mouth local hot spot at Sydney’s Circular Quay. Taking inspiration from Cuba’s plantation-style feel with a hint of modern luxe from vintage Miami hotels of the 1950’s.

The botanical oasis is the brainchild from Apple Jack Hospitality and you will not be disappointed, perched on level two of Pullman Quay Grand Sydney Harbour. This exciting cocktail bar turns cocktails into an art form and truly a satisfying experience.

Bartenders and mixologist has more to offer than oranges, straight-ups and Cosmos. With a bounty of international flavours and tastes, exciting means exotic fruits and cold brews.

Coffee cocktails are evolving and are percolating across bars. With a dress to kill, the Salted Coconut Espresso Martini is a delightful mix of dark rum, cold brew coffee liquor, a shot of espresso and salted coconut syrup. Or why not spice it up with a vanilla vodka and coconut cream.

Exotic fruits are making waves and is a perfect accompaniment to every type of cocktails. Move over Mimosa and Bloody Mary’s, there’s a new wave of brunch cocktails in town.

Kali Cocktail is a juice blend of a blood orange and yuzu (a citrus fruit from East Asia) with a jalapeno-infused tequila and agave. Double strain over the rocks short with ice.

If you like the Kali, we recommend Hacienda’s Old Faithful. With pineapple infused vodka, dry curacao, lime, mint topped with prosecco.

Prefer the sweet taste of victory, then the Cayo Coco Colada captures the Blanco rum, mango sorbet and fresh pineapple – squeeze two lime wedges and shake with the coconut cream.

From Cubano Punch with its guava and passionfruit blend with rum, to the garden of Eve - From the Vine cocktail takes a spin with black American grape, whisky, orang bitters and Laphroaig mist.
